TERIYAKI BEEF ‘N BROCCOLI STIR-FRY
8 oz. lean beef sirloin steak, cut into bite-size pieces 1/2 c. reduced-sodium soy sauce 1/4 c. vinegar 2 T. brown sugar 2 T. oil, divided 1 clove garlic, minced
1 T. fresh ginger 1/4 tsp. pepper 2 c. broccoli florets, fresh or frozen 2 T. cornstarch 2 T. soy sauce 6 c. cooked white rice
In a bowl, stir together the marinade ingredients: 1/2 cup soy sauce, vinegar, brown sugar, 1 tablespoon oil, garlic, ginger and pepper. Add meat and marinate for 2 to 3 hours or overnight. Stir-fry meat in 1 tablespoon heated olive oil until done. Add broccoli and continue cooking until crisp/tender. Dissolve cornstarch in a small amount of soy sauce until dissolve and stir into remaining marinade. Pour over hot mixture and cook, stirring occasionally, over low-medium heat until thickened. Serve over rice.
